Shaker Apple Pie

Ingredients
- 2 pounds apples (about 6 medium apples), peeled, cored, and thinly sliced
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 prepared pie crusts (homemade or store-bought)
- 2 tablespoons butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C). Place one pie crust in a 9-inch pie pan, gently pressing it into the bottom and sides.
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Toss everything together until the apples are well coated.
- Drizzle the lemon juice over the apple mixture and toss again to incorporate.
- Pour the apple mixture into the prepared pie crust, spreading it evenly. Dot the top with small pieces of butter.
- Cover the pie with the second crust. Trim any excess dough and crimp the edges to seal. Cut several small slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg and sprinkle with coarse sugar if desired.
- Place the pie on a baking sheet to catch any drips. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- If the edges brown too quickly, cover them with aluminum foil or a pie shield.
- Remove from the oven and let cool on a wire rack for at least 2 hours before slicing. This allows the filling to set properly.
